Food industry automates its processes with controller technology

Brazil. The largest manufacturer of salted and frozen foods in the south of the country has found in the technology of the controllers the way to guarantee the ideal temperature to maintain the essence of its artisanal preparations.

This is the company Sabor e Sabor, based in Curitiba (Paraná) and present in six Brazilian states, which now guarantees the quality of its products through the Sitrad PRO software from Full Gauge Controls. In the market for more than 30 years, the bakery has an industrial unit with more than 3,300 m² of built area and uses RCK-862 controllers to manage the reciprocating compressors, in addition to the MT-512E Log and TC-900E Log models for the refrigerated and frozen chambers, respectively.

"We have eight compressors managed by RCK-862; three freezing tunnels; a frozen storage chamber; three air conditioning areas; a chiller and three cold rooms," details the supervisor of industrial maintenance, André Rui da Silva (in the final image). And all connected to Sitrad PRO, which allows remote management and brings more agility to the routine of those responsible for maintenance. "The installation of the Sitrad PRO was decisive for the remote management of the operation of the engine room. This saved me time and optimized decision-making," he says.

According to André, automating processes with the Sitrad PRO was essential to act and react in real time and remotely, which demonstrates the capacity of the technology, which was developed in 1997 by Full Gauge Controls and undergoes constant updates to always contribute to the routine of refrigeration professionals.

Sabor e Sabor's relationship with Full Gauge Controls began even before the supervisor was part of the team. André, who has been with the company for five years, reiterates that the bakery already used Full Gauge Controls, but it was after the installation of the first RCK-862 that more advanced processes were automated in the facility.

"We use PLCs that were redesigned and now cost much more, so we look for options with the best cost-benefit ratio. After extensive research, the RCK-862 proved to be the best alternative, also because of its after-sales support, which helped us a lot in the development of recipes since there was no history of using this controller model in large compressors (30 and 40 HP), much less with the use of the Variable Speed Compressor Control function using anhydrous ammonia," André says.

In addition, André highlights the intuitive potential of Full Gauge Controls' solutions, which aim to achieve energy efficiency. "Everything was so easy and intuitive that in just one day I installed and parameterized everything, including process automation macros such as de-icing, setpoints and on/off. In this way we optimize the installation and save electricity," he says.
