Industrial freezing processes are an excellent start to a cold chain. What you are looking for with this procedure is to freeze a food as quickly as possible in order to prevent tissue breakdown, dehydration and the proliferation of bacteria. With the appearance of free trade agreements, the freezing processes triggered the growth of this industry in the face of greater demand and the greater distances and times that food should endure to reach its final consumer.
Peas, carrots, precooked foods, fruits, vegetables and dairy are some of the products that in recent years have been added to fish, meat fillets and poultry to start their journey through the cold chains with an initial freeze.
