Importance: It stops the bacteriological and enzymatic processes that destroy food. Enzymes that affect the taste and texture of meat stop its action from the -18°C.
Who is Responsible for the Cold Chain?
The Beneficiation Plant is responsible for meat and edible meat products reaching the cooling temperature. From here, the other links in the chain, transport and disposal, must maintain the temperature of the product.

Colombia-Latin America. RefriColombia, now RefriAméricas, the congress and commercial exhibition for industrial and commercial refrigeration, will be held on July 15 and 16, 2010 in Bogotá, Colombia.
This year, the event expands its borders throughout Latin America in order to bring together in one place the actors of the refrigeration industry.
Julián Arcila, organizer of the event and editor of the magazine ACR Latin America, says that this year in RefriAméricas 2010 important information will be imparted for technicians throughout Latin America, in addition to generating transnational business opportunities.
Based on the suggestions provided by the advisory committee of the event, the seventh version of the congress will offer its attendees specialized conferences on the production processes of four industries: meat, dairy, poultry and beverages, being the most complete program in Latin America in terms of refrigeration processes, according to Arcila.
This year RefriAméricas 2010 will have the participation of a select group of national and international speakers among which are Jorge Sifaqui, from Chile; Roberto Aguiló, from Argentina; and William Morales of Peru.
In the commercial exhibition of the event visitors will be able to find new developments, equipment technologies and refrigerants, as well as industry trends for the entire region.
RefriAméricas 2010 is the only congress in Latin America that offers varied and structured information in refrigeration with quality, as well as business options.
